Butter: Rub butter on 8X8 glass dish preheat oven at 375 degrees
- 2 Bananas sliced
- 1 1/2 cup of any kind of berries. I used blue
Mix the following ingredients in a med bowl and set aside
- 2 cups steel cut oats
- 1 tbsp aluminum free baking powder
- 1 cup of sliced almonds
- 2 tsp of cinnamon
- 1/4 cup of honey or very fine sugar
- 1 pinch of salt
Mix the following ingredients in a medium bowl and set aside
- 2 cups of milk, or coconut milk
- 1 egg scrambled
- 2 tsp of vanilla
Layer bottom of baking dish with sliced bananas, then layer with berries saving a few for later.
Sprinkle oat mixture over berries.
Slowly pour milk mixture over oats, tap the dish on counter to be sure to get rid of air bubbles.
sprinkle berries, more nuts over mixture.
Bake for 35 to 40 minutes or until a bit brown on top.
Top with a bit of butter and maple syrup and serve.
